The way eggs live outside the refrigerated display The way eggs live outside the refrigerated display case - that’s another thing that says France to us. Okay, I know France doesn’t stand alone here, and I had persuaded myself that the relaxation of food hygiene standards related to the fact that the vendor probably knew the name of the chicken who had laid the eggs just that morning. Turns out that refrigeration has nothing to do with freshness but rather how the eggs are cleaned. Washing them in chlorinated water, as Americans do, removes the outer, protective layer of the shell. The eggs then must be refrigerated so they’re not infected with bacteria. In France and other parts of Europe, eggs are washed in plain water. They stay fresh for days - even when they sit outside the market’s refrigerated case.
